Spicy Faux-Queso

Can I first just say that my husband is THE BEST?! Let me tell you one of the reasons why. I have a client that I was coaching in a live video. She was new to Regeneration Protocol and very ready to change her life. However, she was hung up on one thing. Giving up on queso. I mean, I can’t blame her. It’s so yummy. However sometimes we have to want to be healed more than we want warm, creamy, spicy cheese dip. That’s where my husband steps in. Because he likes a win/win in every area of our life. Including queso. So he created this recipe. He’s my hero.

This recipe is Regeneration approved mostly. I say mostly because we used serrano peppers for the heat. If you are healing an autoimmune disease, you’ll have to skip the peppers. But you can use Ganthoda Powder which is the root from long peppers. So yummy and packs heat for sure! 

Let’s get cookin’!

The shopping list:

  • 1 cup Raw Cashews

  • 1 Cup Frozen Cauliflower Rice

  • 1 Serrano Peppers or 1 tsp. of Ganthoda Powder (if autoimmune)

  • 1 lime or lemon juiced

  • 3 tsp. Nutritional Yeast

  • 1 tsp. Tapioca Starch

  • 3 tsp. Salt

  • 1 cup of Water

Kitchen Equipment needed:

  • High powered blender like a Vitamix (Here’s a link to our favorite blender)

  • Medium saucepan

This recipe is super simple to make.

  • In a small saucepan, combine 2 cups of water, cashews, Cauliflower rice, and one serrano.
  • Bring to a boil then turn off heat.
  • Strain the liquid off the ingredients then pour into blender.
  • Add citrus juice, 1 cup of fresh water, salt, nutritional yeast and starch to blender as well.
  • Blend on high until smooth and creamy.
  • Pour contents back into pan and heat on low until desired consistency.
